Title: Won Ton Beignets with Chocolate Sauce

: Cooking Oil -- for deep-fat
: frying
 20Won-Ton Wrappers
: Powdered Sugar
 6 Oz Semisweet Chocolate Chips
1/4 cHeavy Cream
 1 TB Brandy

1. In a small deep saucepan, pour oil to a depth of 2 to 2 1/2 inches. Heat oil to 375F, or until a 1-inch cube of bread turns brown in oil in 45 to 50 secs. Stack won ton wrappers together in groups of 4. Cut each stack into 3 equal strips. Fry strips, a few at a time, in hot oil until golden, turning a few times to cook evenly, 15 to 30 secs. Using a slotted spoon, transfer to a paper towel-lined plate to drain. Let cool. (Store in an airtight container if making ahead.) Before serving, sift powdered sugar over both sides of fried strips. 2. Meanwhile, in a small glass bowl, combine chocolate chips and cream. Heat in a microwave on High 1 to 1 1/2 mins, or until chocolate is melted and mixture is smooth when stirred. Stir in brandy. Let cool to lukewarm. 3. Serve won ton strips in a napkin-lined basket with a dish of luke warm chocolate sauce in center for dipping.
